Asian Burgers with Sriracha Mayo

Just because fall is upon us doesn't mean we have to pack away the grill just yet!  Enjoy the last days of summer and the warm fall days by being outdoors and cooking outdoors as much as possible before winter hits!  We've found some great burger recipes to try before grilling season is over.  Enjoy!



Asian Burgers with Sriracha Mayo
Serves: 4

Ingredients: 
For the Burgers:
1 1/2 lb lean ground beef
2 T Asian oyster sauce
2 T regular soy sauce
1 T granulated sugar
2 tsp garlic powder
2 tsp onion powder
1 tsp Asian toasted sesame oil (caramel brown in color)
1/2 tsp ground ginger
1/4 tsp white pepper
1/4 tsp kosher salt
1 egg

Sriracha Mayo: 1/2 cup whole mayo + 4 tsp Sriracha + 2 T dijon mustard (kick up or tone down the amount of Sriracha as desired.)

For Serving: 4 buns or Ciabatta rolls, 8 oz bag cabbage cole slaw mix (no dressing), and fresh cilantro leaves

Instructions:
Make Sriracha Mayo: Combine mayo, Sriracha, and dijon mustard in a bowl. Add more or less Sriracha depending on how much kick you want. (As written, it's a moderate spice level.)

In a large bowl, combine all burger ingredients and mix well to thoroughly incorporate. Form into patties.

Grill on preheated grill until patties are cooked to your liking. Medium is recommended. Serve with cabbage slaw, cilantro, and plenty of Sriracha mayo on buns.



BA Burger Deluxe

BA Burger Deluxe
Servings: 4

Ingredients:
1 1/2 pounds ground beef chuck (20% fat)
1 1/4 teaspoons kosher salt
1/2 teaspoon freshly ground black pepper
4 slices American cheese
4 potato rolls (such as Martin's or Oroweat)

Instructions:
Divide meat into 4 equal portions (about 6 oz. each). Place 1 portion on a work surface. Cup your hands around the meat and begin to gently shape it into a rounded mound. (Use light pressure as you shape so you don't pack the meat too tightly.) Lightly press down on the top of the meat with your palm to gently flatten it. Continue rotating and cupping the meat, patting the top of it occasionally, until you've formed a 4"-diameter, 3/4"-thick patty. Using your thumb, make a small indentation in the center to help keep the burger flat as it cooks. Transfer to a plate. Repeat with remaining portions.

Build a medium-hot fire in a charcoal grill, or heat a gas grill to high. Season one side of patties with salt and pepper; place on grill, seasoned side down. Grill until lightly charred on bottom, about 4 minutes. Season other side, turn, and top with cheese. Grill to desired doneness, about 4 minutes longer for medium. Transfer burgers to buns and let stand for 3 minutes before serving.

Bacon Burgers with Bourbon Caramelized Onions and Goat Cheese

Bacon Burgers with Bourbon Caramelized Onions and Goat Cheese

Prep Time: 20 minutes
Cook Time: 20 minutes
Total Time: 40 minutes
Serves: 4 burgers

Ingredients:

Bourbon Caramelized Onions
2 teaspoons grapeseed or other flavorless oil
1 large yellow onion
1 teaspoon maple syrup or brown sugar
1/8 teaspoon kosher salt
Black pepper to taste
2 tablespoons bourbon

Honey Thyme Goat Cheese
4 ounces goat cheese, softened
1 tablespoon honey
1/2 teaspoon fresh thyme, chopped

Bacon Burgers
1 pound lean ground beef
4 slices of uncooked bacon, diced
1/2 teaspoon kosher salt
Black pepper to taste
Other Ingredients
4 hamburger buns
arugula or mixed greens


Instructions:

Bourbon Caramelized Onions
In a medium sized saute pan heat the oil over medium high heat.
While the oil is heating, thinly slice the onion.
Once the pan is hot add in the sliced onions, salt, and black pepper.
Saute the onion for a couple minutes then add in the maple syrup or brown sugar.
Turn the heat down to medium and continue to cook the onions until they soften and turn golden brown in color, about 6-8 minutes.
Add the bourbon into the onions and saute for another minute, then remove them from the heat.

Honey Thyme Goat Cheese
In a small bowl mix together the goat cheese, honey, and fresh thyme until completely combined.

Bacon Burgers
Heat the grill to medium high heat and oil the grates to prevent the burgers from sticking.
In a large bowl gently mix together the beef, diced uncooked bacon, salt, and pepper.
Form the meat into 4 patties being careful not to overwork the meat.
Grill the burger on each side for 4-6 minutes or until they reach an internal temperature of 160 degrees and the juices run clear.  Remove the burgers from the grill and toast the buns if desired.

Assembling the Burgers
Place a burger on the bottom half of each bun and top it with some of the bourbon caramelized onions and arugula.

Spread an equal amount of the goat cheese on the top half of each of the 4 buns.
Serve immediately.
